Dinner Tonight Was Still Swimming a Few Hours

I have a passion for cooking. Just up the street, the fishermen come in with their catch at the end of the day. This afternoon we were fortunate enough to purchase a Yellowtail. The fisherman filleted it, chopped off its head and put it into a plastic shopping bag for me. Alex was a bit stressed about the shopping bag part of the trip, and the gutting part, and the chopping up the head part too. Lucky for me, none of that bothers me at all.

I came back to the Beachside Bungalow and cleaned up the filleting. I poached all the unwanted boney parts along with garlic, cilantro, lemon, pepper, salt, onions and red peppers. Strained off the fish sauce and added it to my baking pan that contained the filleted fish pieces. Covered it all with sliced tomatoes, onions, garlic, lemon, onions and red peppers. Baked for about 14 minutes at 400 degrees. Totally yummy.
